  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 2 tbsp paprika (sweet or smoked, depending on preference)
  • 1 tsp caraway seeds (optional, for a traditional flavor)
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin (optional)
  • 1/2 tsp ground black pepper
  • 1/4 cup tomato paste
  • 1 can (14.5 oz) diced tomatoes or 1.5 cups fresh tomatoes, chopped

  • 2 medium potatoes, peeled and cut into chunks
  • 1 cup frozen peas (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Brown the Beef:

  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Add the beef cubes in batches, browning them on all sides. Remove the browned beef and set aside.

2. Sauté the Vegetables:

  • In the same pot, add the chopped onion and cook until softened and translucent, about 5 minutes.
  • Add the minced garlic and bell pepper, cooking for another 2 minutes.

3. Add Spices and Tomato Paste:

  • Stir in the paprika, caraway seeds (if using), dried thyme, ground cumin (if using), and ground black pepper.
  • Add the tomato paste and cook for 1-2 minutes to caramelize slightly.

4. Combine Ingredients:

  • Return the browned beef to the pot.
  • Stir in the diced tomatoes and beef broth. Bring to a boil.

5. Simmer:

  • Reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the beef is tender. Stir occasionally.
  • Add the potato chunks and cook for an additional 20-30 minutes, or until the potatoes are tender.

6. Final Touches:

  • If using, stir in the frozen peas during the last 5 minutes of cooking.
  • Add Worcestershire sauce (if using) and adjust seasoning with salt as needed.

7. Serve:

  • Garnish with chopped fresh parsley.
  • Serve hot with crusty bread, over noodles, or with a side of dumplings.
